First time Straight user

Why do you say that?
Is there a noticeable difference between the two? I am using a shavette as a step before ordering a decent straight

Simples.
A straight, good sheffield steel, with weight and feeling.
A shavette, is light unweilding it bounces and above all sharp.
A straight is like, enjoying life.
A shavette is like enjoying it while sitting cross legged on a railway line, good but could get shitty if you need to move fast.
Personally id start with a forgiving real straight and move onto a shavette, jmho you understand.

strict hygienic rule, well, then I take it for granted that they also disinfect the whole razor before inserting a new blade but then again not sure why disinfecting a normal straight razor after each shave would not work?

I asked a barber about this today.

They are in almost constant use on a busy day, so require regular stropping. There's no real practical method of keeping the strop disinfected throughout the working day and there might not be enough time between uses for the barbicide or whatever to fully disinfect the blade between uses, so there are multiple pathways for infection.

So a fresh DE blade per customer is much safer than a possibly very briefly disinfected straight blade.
 
My take on regular straight razor: disinfect between customers, then strop

My take on shavette: fresh blade fine, but please also disinfect rest of razor

My take on gloves: use them

as a dilettante home user of both straight razors and shavettes I find the former much easier to keep clean as the blade holder of shavettes are notorious gunk magnets
