Restaurant quality, that! Not that Italian cuisine is especially complex ... but damn 'effing good!

Trout is so much more interesting than Salmon. Definitely going to buy more trout. The sauce was as classic as it comes - boil good pasta which should release flour into the cooking liquour, melt butter (and a touch of garlic) with some Parmigiano Reggiano and move the cooked pasta in with some of the water, keeping it moving until a silky sauce emerges. Serve. Black Pepper, more cheese ... and I went with some tomato and slices scallions to cut through all that.

Damn good! Damn 'effing good!
