As Harry Potter might have said, Expecto Patronus. I expecto I'll not feel magic in the morning... that 'Naturtrüb' (naturally cloudy) yeast adds to the flavour though. And yes, that's the right amount of 'schaum' which is why they serve it in those glasses.
